At the initial stage of grain processing in the process of preparing a batch using a cavitation reactor, a significant change in various dry substances occurs with the simultaneous accumulation of low molecular weight forms of fermentable and non-fermentable carbohydrates, dextrins of various molecular weights, and amine nitrogen. The use of cavitation treatment provides a deep destruction of raw materials, which contributes to their easier dissolution during subsequent thermal and enzymatic treatment. The use of a cavitation reactor makes it possible to process grindings with different granulometric composition of rye grain particles and obtain media with a high content of soluble solids without worsening rheological parameters. The content of high-molecular dextrins and reducing substances is doubled, soluble protein is three times more, than in mixing with traditional methods. The vinasse output is reduced by 50% and the vinasse filtrate is reused in the technological process at its various stages. When working on the new technology, it is possible to use a softer processing mode, which led to a reduction in heat and power consumption by 25 - 30%. The degree of hydrolysis of concentrated saccharified wort according to the proposed technology is 95 - 97%.
